Cupcake Madness: The End.

I know the NCAA tournament is over, and I know I said I would make six different cupcakes for my sweet six series, to coincide with the sweet sixteen/final four, however that did not happen. I tried, I really did. If no time management skills had a poster child, it would be me. Unfortunately the real world calls, and the only excuse I have is that I was swamped at work. In fact, I am in Florida right now on business.

At first I was just going to leave it as is. The (excuse my french) F*** IT approach, but I couldn’t just leave you with my recipes for Double Chocolate Cupcakes, Lemon-Lime Cupcakes, or my Peanut Butter and Jelly cakes. No, no couldn’t do it, so here’s a little eye candy to end my cupcake madness series. Then it’s back to food for me, I don’t think I want to do sweets for a while. And by a while, I mean a week. Here are some ideas, and pictures from the National Capital Area Cake Show, that I attended last weekend.

It was my first time at the show, and I was impressed by all of the wonderful cakes, and the products from different businesses from across the country. Did I mention all of the edible glitter? I think I was standing in front of a display of glitter for at least 10 minutes. Really it’s the little things in life that make me happy, and if those little things happen to be shiny and bright, I’m in heaven.

Cupcake Madness: Peanut Butter Jelly Time!

{Singing} It’s peanut butter jelly time! It’s peanut butter jelly time! No baseball bat, only my third installment of delicious cupcakes in my March Madness Sweet Six Series.

I chose these cupcakes because who doesn’t like a good peanut butter and jelly sandwich?  When you’re hungry, PB&J’s hit the spot every time, and it’s because of this I wanted to make sure these cupcakes tasted just like the classic sandwich. I was a little worried that the peanut butter would make the cupcakes dry, but I was pleasantly surprised with the results. So was Jaime, a friend, and peanut butter connoisseur, who I commissioned to be my taste tester.  These cupcakes passed her test, and I hope they’ll pass yours.  Enjoy, after all, “IT’S PEANUT BUTTER JELLY TIME!”

Cupcake Madness: Part Deux

I’ve had the craziest sweet tooth lately, I’ll post some ‘regular’ food soon, but for now it’s still Cupcake Madness! As promised here is cupcake #2 in my Sweet Six. I decided to try something a little different, so I combined some of my favorite ingredients to make these babies. Well, it was more like what I could make with ingredients I already had stocked in my fridge and pantry. So here they are:

Lemon & Cranberry Soda Cupcakes with Lemon-Lime Buttercream Frosting

Adapted from Bakerella’s Vanilla Cupcakes

Cook Time: About 1 hour 15 minutes

Servings: Makes about 24 Cupcakes

Ingredients (Little Commentary Needed, Super Easy to Make)

Cake:

3 Cups of Self-Rising Flour – Sifted

1 cup of unsalted butter – this is 2 stick of butter, always at room temperature

2 Cups of Sugar

4 Eggs – at room temperature

1 Cup of Cranberry Soda – I used an Italian Sparkling Soda. Have another soda you love? Try it with Blood Orange Soda, or maybe Pink Lemonade, perhaps Strawberry. The sky’s the limit.

1 Teaspoon of Lemon Extract

Cupcake Madness

I woke up yesterday, and had cupcakes on my mind.  My Fiance, Mr. Donut, woke up with basketball on his.  While it’s March Madness for him, it’s Cupcake Madness for me.  For the past two weeks, I’ve been making cupcakes every Sunday, and I think it would be fun to fill my brackets with the best cupcake recipes I know.  Some new, some old, heck maybe even a wild card or two.

I know I shouldn't have tried the batter as it had raw eggs, but it was delicious! So much chocolate.

Mr. Donut is currently in first place in his NCAA bracket at work, and I’m hoping that these chocolate cupcakes will go all the way.  However, it’s all up to you and my many friends and family to make the final decision.  Like the games this weekend, I think it’s going to be close and unpredictable.  Mr. Donut is still in shock over the University of Pittsburgh upset.

So here’s how it’s going to work, after this weekend there are sixteen teams left, competing to win the NCAA Championship.  I probably won’t be able to make sixteen different cupcakes by then, but I’m going for a Sweet Six.
